The casabe is a typical tart of cassava´s flour of the east of Cuba which was inherited of the aboriginal ones local, today one of the new culinary offers of Caribbean island constitutes for foreign tourists.

In the town of Vilató, to the north of Camagüey, it stays the family tradition of elaboration of the casabe, like form of economic sustenance and commercialization of a very old product that their emergence goes back to the aboriginal ones.

During the celebration of the International Festival “Gourmet” that took place in Varadero, a state company of the county of Sancti Spíritus presented the initiative of this product.

Several participants in the event, dedicated to the Cuban cuisine and their relationships with the sector of the tourism, incorporated the casabe in diverse plates to those that printed their matter style.

“The casabe is patrimony of the kitchen of the east of the country; to rescue it for the occident is the mission that we have in the company. We are already introducing it in the tourist pole of Trinidad (center of Cuba), and we will extend it then to Varadero (occident) and to the rest of the hotel chains of the country”, said Tomás López, director of the company.

As example of a plate that one can make with cassava, López mentioned a tart to which other ingredients are added to savor as veal mincemeat, scrambled eggs or cheese, seasoned with a sauce to enhance its flavor.

In the antiquity, the casabe or ¨bread of the earth¨ was consumed by the Indians as bread, that which they knew the nutritional value of the cassava, and today in day takes place in Colombia, Guatemala, Belize, Dominican Republic, Honduras, Brazil and Venezuela.

The casabe is considered a food of low calories and rich in fibers, and it is usually served with the butter or the oil, garlic, parsley, cheese, the roasted pig meat with sauce Creole in restaurants.

The gastronomy is one of the key components of the Cuban culture that it promotes in the tourist sector, an area that represents the second source of revenues of Cuba, which represents a contribution from 10% to the gross internal product and the creation of half million of work positions.
